Roasted Rosemary Cashews

Tired of spending $7-10 on a small bag of gourmet herb-infused nuts? I am! So, I decided to make my own. You don't have to use just cashews, you can use a variety of mixed nuts for the recipe below.

Roasted Rosemary Cashews
Ingredients:

·         1 1/4 pounds cashew nuts

·         2 tablespoons of coarsely chopped fresh rosemary leaves

·         1/2 teaspoon of cayenne pepper

·         2 teaspoons of dark brown sugar

·         2 teaspoons of kosher salt

·         1 tablespoon of melted butter

Preheat the oven to 375 degrees and place the cashews (*can also use walnuts, or any mixed nut blend) on an ungreased baking sheet. Bake for about 10 minutes until cashews are warm and golden brown. While cashews are baking, combine the rosemary, cayenne pepper, brown sugar, salt and butter in a large bowl. Toss the warm cashews with the mixture until they are completely coated. Serve warm in paper cups or bowls.
