EatingWell's Pimiento Cheese

Another great recipe courtesy of EatingWell. This is the perfect snack for the big game, and healthier if made at home.

Ingredients

  • 1 1/2 cups shredded reduced-fat sharp Cheddar cheese
  • 1/4 cup low-fat mayonnaise
  • 1 4-ounce jar sliced pimientos, drained and chopped
  • 2 tablespoons minced scallions
  • Hot sauce to taste (optional)

Preparation

  1. Combine cheese, mayonnaise, pimientos, scallions and hot sauce (if using) in a medium bowl.

Tips & Notes

  • Make Ahead Tip: Cover and refrigerate for up to 3 days

Deck the Halls with this Delicious Dip!

The holidays are here, which means gift shopping, cookie baking and of tons of tree trimming parties. And what better to serve at your next holiday party then easy to make, and easy to eat dips.

Bacon-Horseradish Cheese Spread
Recipe reprinted courtesy of my dad
(however, he made me leave out two secret ingredients)


Ingredients:

  • 6 8-ounce packages of cream cheese (regular or 1/3 less fat)
  • 8 ounces of horseradish (strained)
  • 8 ounces of real bacon bits
  • 1/8 teaspoon of seasoned salt

Instructions:
Let the cream cheese soften in a mixing bowl (can speed it up by placing bowl with cheese in oven at 200 degrees for 10 to 15 minutes). When soft, beat with a hand mixer and gradually add remaining ingredients a little at a time. Scoup mixture into a serving dish or bowl, cover and refrigerate overnight. Serve with an assortment of crackers and meats.

Golden Globes Grub

Take in the Golden Globes today with some of these simple and yummy recipes.

Mom's Taco Dip
Ingredients:
2 8-ounce cream cheese softern
1 12-ounce mixed taco sauce
1 tomato - diced
Sliced black olives (how many you like)
Green onions (how many you like)
Grated Monterey cheese, cheddar cheese (or any other cheese you like)
Tortilla chips

Instructions:
Mix together the cream cheese a taco mix sauce together.
Spread on a plate
On top of the mixture, sprinkle the cheese, tomato, onions and olives.
Serve with tortilla chips

Guacamole
Ingredients:
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic

Instructions:
In a bowl, mash together the avocados, lime juice, and salt
Mix in onion, tomatoes, and garlic
Refrigerate 1 hour for best flavor, or serve immediately

Fruit Dip
Ingredients:
1 8-ounce package cream cheese, softened
1 7-ounce jar marshmallow creme
Assorted fruit (strawberries, bananas, grapes, apples)

Instructions:
Using an electric mixer, blend cream cheese and marshmallow creme until mixed thoroughly
Serve with fruit
